It’s taken me a few years to come up with  a good recipe for baking the perfect sweet potatoes. 

Firstly their either too soggy, or too dry πŸ™ˆ. 

I have come to a conclusion that they only taste perfect with Cajun spices on them, I’ve tried many other methods with just salt and pepper (too bland), paaprika (too bland). The Cajun spices are a perfect paring with sweet potato, they taste really sweet and not too spicy if you just put a little sprinkle on; it gives them a good kick. 


First you have to slice the sweet pots so that they are thin; like so. I find cutting into chips is too much hassle and because the diameters are often equal in the circle-like shape, it makes it easier to cook and coat with spices and oil. Also easier to flip over half way. 

The ingredients are also placed in the photo. I added sweetener to enhance the sweet potatoes, I saw a recipie online to add sugar so I thought I’d add sweetener to see what happens. I’ve tried both recipes and both taste just as good; obviously this recipe is healthier for you. 


To help coat the sweet pots evenly I placed in a sandwich bag and put a teaspoon of each spice and sweetener in. Followed by two dessert spoons for coconut oil melted. 


Then cook on oven 200c for 30 mins turning half way. This time can be increased or decreased; depending on how thick the sweet potatoes are. 

I had a cocktail yesterday because it was so sunny! I know that’s a bad on a Monday but I loved the sunshine, you can’t not have a cocktail when it’s 24c in England! I weighed myself also and have lost weight yay. All these weekends not binging is paying off.

I thought I would post something fun! 
A day in the life of Estelle; FOOD. 😍. 

As I am trying to get in shape for holidays ( especially going over board bank holiday weekend with the food), I thought I’d post my meals I had today. 
BREAKFAST. 


Banana on toast! Approx – 300 cals 

Snack 

Apple 

Lunch 


Chicken chunks, cucumber, hard boiled egg and avocado. W/ a Bulk powders whey protein shake. Approx- 420 cals 
Snack

Apple + Master Rice sweet chilli thins; Approx 150 cals

Dinner 


Turkey bolognese and courgetti spaghetti/ zucchini. 😍😍😍 Approx- 525 cals

P.s I made this sauce from scratch! 

Here is the recipie: 

Serves 2

Ingredients

  1. Tinned chopped tomatoes 
  2. 2 dsp of tomato purΓ©e 
  3. 450g turkey mince 
  4. Coconut oil 
  5. 1 red onion 
  6. Oregano 
  7. Basil 
  8. Garlic powder 
  9. Salt 
  10. Pepper 
  11. Courgetti spaghetti 

Method. 

  1. Chop up onions and slowley caramelise in pan on low heat w/ coconut oil for about 5-10 minuets. 
  2. Add turkey mince garlic powder oregano, basil, salt and pepper. Cook until meat turns light pink.
  3. Add the chopped tomatos, tomato purΓ©e and turn to a really low heat. Cook slowley for 30 mins. 
  4. Stir fry the zucchini / courgetti spaghetti. 
  5. Serve and enjoy ❀️

Dessert

Options hot chocolate w/ semi-skimmed milk + a muller light toffee yoghurt!

Hey,

I am a TOTAL creature of habit. I have the same breakfast (banana on toast). Every day. 

However, at dinner time I like to try different meals, but when I do try them I tend to have it until I get bored of it. 

At the moment the meal I just can’t get enough of is Chicken fajita salad πŸ˜πŸ˜›. 

It’s a healthy alternative to your usual Mexican choice, topped with avocado to neutralise the spices. 

It’s a real treat! Weighing up at around 400 calories per meal it’s great before bikini season! 

  
If you’re wondering what that is in the wine glass it’s sparkling raspberry with mint. I am not a wine drinker unfortunately. Especially I like to keep it healthy at the moment as I just have over a month till holiday! 

I weighed myself today and I’ve lost a kilo! No binge eating at the weekends but still enjoying my cheat meals and treats has been paying off!  

Ingredients

  1.  Coconut oil  (to cook with) 
  2. Chicken breast 
  3. Handful of Spinach
  4. Packet of Fajita seasoning
  5. 1/2 Avocado
  6. 1 pepper 
  7. 3 spring onions  

Method

  1. You can either slow cook the chicken on 200c with fajita seasoning sprinkled over for 30/35 mins. Or dice the chicken and medium fry in the pan sprinkling fajita seasoning over.
  2. Once chicken is throughly cooked, dice peppers and spring onions and other vegetables that you wish to the pan cook till soft. (4-5 mins on high heat). Add more fajita seasoning to the mix! 
  3. In a bowl place a handful of spinach and put the fajita contents on top l, with an avocado. 
  4. ENJOY!

Weekends are my biggest battle.

In the past few weeks I have been over indulging at the weekends and although I have been healthy in the week I always eat extra over the weekend. So overall the healthy eating I do in the week doesn’t balance out the cheat eating at the weekend. 
I still believe in having chocolate and sweet treats. However I have had a long battle with starving and binging and slowly but surely got back into binging over the weekend, although this time it’s not packets of stuff it’s still more than what I should be eating. 
I weighed myself at the gym this morning and I was a bit shocked with how much I’ve gained, however I’m glad as it has given me a kick up the bum! So I can go back to living that balanced life at weekends, I need to articulate control better and today has given me the motivation to do so!
